Chai Tea Currant Loaf Recipe
2 x Chai Masala tea bags (or 4g of loose leaf tea)
1 cup dried currants
1 cup of brown sugar
2 cups of self-raising flour
1 egg (or vegan alternative) 

Brew a cup of Chai Masala tea, add to currants and brown sugar and soak overnight or until the tea is cold depending on the depth of flavour you want.

Preheat the oven to 180 celsius, grease a loaf tin and line with baking paper.

Mix the flour and egg into the currant mixture and pour into the loaf tin.

Bake for 40 mins (thermowave) 45 mins (Bake).
Rest on a baking rack for 20 mins before cutting. Spread with butter and enjoy!
